How it works
Most coffee on a shelf was roasted between six weeks and eight months ago. Ours is measured in days, because we only roast what has already been bought.

Two trips a year, the same six exporters. Every bag on this page has a farm, a mill and a price we paid printed on the back.
A 1962 Probat, twelve kilos at a time, profiled by ear and by probe. Nothing sits in a warehouse waiting for an order.

Brew guide
Good coffee is mostly arithmetic. Weigh the beans, weigh the water, keep the time honest — the rest is preference. Every order ships with these on a card.

Bloom 45 s, then three even pours.
Grind finer until it tastes sweet, not sharp.
Break the crust at four, decant at eight.
Coarse grind, fridge overnight, dilute 1:1.

Every bag is roasted the day before it ships and carries its roast date on the label. Most orders arrive between three and five days off the roaster — the sweet spot for filter, and about right for espresso once it has rested another two.
Both. Choose your grind at checkout and we set the burrs to match your method. Whole bean keeps its aromatics roughly six times longer, so if you own a grinder, use it.
A flat $5.50 nationwide, free over $45 — about two and a half bags. Orders placed before 2pm Thursday go out on Friday; anything later joins the next roast.
Yes. Order Daybreak House and add “subscribe fortnightly” in the notes at checkout — we will set it up by hand and email you before every roast so you can swap the coffee or skip a week.
If a bag is not right, tell us within fourteen days and we will replace it or refund it, opened or not. We would rather know what went wrong than keep your money.
